(Des Moines) State public health officials are warning you not to let the stress of the holiday’s compromise cooking safety. Doctor Patricia Quinlisk says some things change when cooking for a big crowd, but basic cooking safety shouldn’t.
“When you start cooking huge amounts of food some of the cooking rules sort of change. There is a lot of difference between cooking a couple pound chicken and cooking a 40 pound turkey,” said Quinlisk.
Dr. Quinlisk suggests you start cooking early and refrigerate what can wait. Or, she says you should have your guests bring some dishes to take some of the pressure off of you. If you have questions, Dr. Quinlisk says there are national hotlines for almost every food safety issue.
